Beat the heat with these two refreshing summer delights, writes TEAM AGENDA

Mango Lassi Popsicles

Ingredients:

  • 1 cup ripe mango pulp
  • 1 cup thick yoghurt (curd)
  • 2 tbsp honey or sugar (adjust to taste)
  • ¼ tsp cardamom powder

Method:

  • Blend mango pulp, yoghurt, honey, and cardamom powder until smooth.
  • Pour the mixture into popsicle moulds.
  • Freeze for 6-8 hours or until set.
  • To serve, run warm water over the moulds for a few seconds and gently remove the popsicles.

Tip: You can layer the pops with a swirl of plain yoghurt for a pretty, marbled look.

Watermelon Feta Salad with Mint

Ingredients:

  • 2 cups watermelon (cubed)
  • ½ cup feta cheese (crumbled)
  • A handful of fresh mint leaves (chopped)
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste

Method:

  • In a large bowl, combine the watermelon cubes and crumbled feta.
  • Add chopped mint leaves.
  • Drizzle olive oil and lemon juice over the salad.
  • Season with salt and pepper, then gently toss.
  • Serve chilled for a refreshing treat.

Tip: Add a few cucumber slices or pomegranate seeds for extra crunch and flavour.
