To enhance the taste buds of the foodies, the 400 year history behind the culinary delights of Hyderabadi food will be introduced during the four day long Hyderabadi Food Festival 'Nizam Ki Nazakatien The Heritage flavours'.

The three day Hyderbadi Food Festival will be held at Barbeque Lawn, Noor-Us-Sabha Palace hotel, situated above the picturesque upper lake of Bhopal from Friday.

Executive Chef S Gopikrishna and his team will recreate the authentic flavours of Hyderabadi cuisine for Bhopalites. Talking with the media persons here on Wednesday, Chef Gopikrishna talked about the special flavours of Hyderabadi food and its specialties.

"There is a saying in Hyderabad that cooking patiently is the key as slow-cooking is the hallmark of Hyderabadi cuisine," he said.

"A 400-year history is behind the culinary delights of Hyderabadi food. It evolved in the kitchens of the Nizams and the cuisine is linked to the nobles, who religiously maintain the authenticity of the past," he added.

Hyderabad is never complete without the mention of the "Shahi Dastarkhan". Food is served on a chowki which is a low table, instead of a dining table and cotton mattresses for squatting and bolsters are used for the back rest.

The Chef will create an extensive array of mouth-watering delicacies. There will be a buffet spread of the choicest items consisting of eight non-vegetarian dishes and 10 vegetarian dishes, along with a variety of salads and desserts. The most popular Hyderabadi dishes as relished by the gentry of Bhopal shall be included in hotel’s menu subsequently.

Such as Biryani, Hyderabad's most famous dish, an authentic meal of Hyderabad invariably includes a Mutton Biryani.

Chicken and vegetarian biryanis are also popular variants. Haleem is another very famous preparation which is a seasonal delicacy of wheat and meat, and cooked for hours to a porridge-like paste.

Dishes like Pathar ka gosht, gosht dum ke kabab, Machli Anari Tikka, Palak Ka Kabab, Subji Sikhampura, Adraki Keema Shorba, Gosht ka Haleem, Nalli Nihari and more will be served. Also desserts like Khubani Ka Meetha, Sheer Khorma, Dabal Ka Meetha will be served as well.
