Mango Lassi Popsicles
Ingredients:
- 1 cup ripe mango pulp
- 1 cup thick yoghurt (curd)
- 2 tbsp honey or sugar (adjust to taste)
- ¼ tsp cardamom powder
Method:
- Blend mango pulp, yoghurt, honey, and cardamom powder until smooth.
- Pour the mixture into popsicle moulds.
- Freeze for 6-8 hours or until set.
- To serve, run warm water over the moulds for a few seconds and gently remove the popsicles.
Tip: You can layer the pops with a swirl of plain yoghurt for a pretty, marbled look.
Watermelon Feta Salad with Mint
Ingredients:
- 2 cups watermelon (cubed)
- ½ cup feta cheese (crumbled)
- A handful of fresh mint leaves (chopped)
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper to taste
Method:
- In a large bowl, combine the watermelon cubes and crumbled feta.
- Add chopped mint leaves.
- Drizzle olive oil and lemon juice over the salad.
- Season with salt and pepper, then gently toss.
- Serve chilled for a refreshing treat.
Tip: Add a few cucumber slices or pomegranate seeds for extra crunch and flavour.
