Indulgent Flavours

Imagine this, you're sitting at the dining table, the air filled with the warm, inviting aroma of vanilla feels like a hug in every bite. A silky smooth cheesecake layered with a luscious berry glaze, this Berry Bliss Cheesecake is a perfect fusion of rich creaminess and tangy berry flavours. Here are the ingridients for a Berry Bliss Cheesecake:

Ingredients (Serves 6-8)

For the Crust:

  • 1½ cups crushed digestive biscuits or graham crackers
  • ¼ cup unsalted butter (melted)
  • 2 tbsp sugar

For the Cheesecake Filling:

  • 2 cups cream cheese (softened)
  • 1 cup heavy cream
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp cornflour
  • ¼ cup milk

For the Berry Glaze:

  • 1 cup mixed berries (strawberries, raspberries, blackberries, blueberries)
  • ¼ cup sugar
  • 1 tbsp lemon juice;
  • 1 tsp cornflour dissolved in 1 tbsp water

For Garnish:

  • Fresh berries;
  • Mint leaves

Method

Step 1:

  • Prepare the Crust
  • Mix crushed biscuits, melted butter, and sugar.
  • Press into a greased cake tin and refrigerate for 30 minutes to set.

Step 2:

  • Make the Cheesecake Filling
  • Whisk cornflour into milk until smooth.
  • Beat cream cheese, powdered sugar, and vanilla extract until creamy.
  • Add heavy cream and beat until smooth.
  • Gently fold in the cornflour mixture.
  • Pour over the prepared crust and refrigerate for 6 hours or overnight until firm.

Step 3:

  • Make the Berry Glaze
  • Heat berries, sugar, and lemon juice in a saucepan until soft.
  • Add the cornflour mixture and simmer until thickened.
  • Strain for a smoother texture (optional) and let it cool.

Step 4:

  • Assemble and Serve
  • Pour the berry glaze over the chilled cheesecake.
  • Garnish with fresh berries and mint leaves.
  • Slice and serve cold.

  • Use full-fat cream cheese for the best texture.
  • Allow the cheesecake to set completely for clean slices.
  • Straining the berry glaze enhances the smoothness.
