Step into RAAG, where each bite you take, will let you experience original flavours, writes ABHI SINGHAL

In the heart of Rajouri Garden, RAAG orchestrates a dining experience that harmonises India’s diverse food heritage with artistry and ambiance. Stepping inside RAAG feels like entering an aesthetic royal world where flavours, soft music, and traditional design comes together as a perfect dining. The menu, inspired by time-honoured recipes and slow-cooked traditions, takes diners on a gastronomic journey across the country. From the rich, aromatic Ek Taar ki Nihari to the indulgent Kaladi Bharwan Gucchi, every dish tells a story steeped in history.

With a diverse menu of Chaats, Shorba, Grill and Tandoor, Platters, Main Course, Degh, and so much more, the restaurant has so much to offer with a literally delicious taste.

If you start from chaats, the beloved street-style delight, Moradabadi Dal Ki Chaat is a symphony of textures and flavours. Made with protein-packed tallow-moong dal lentils, this dish is a warm, velvety bowl of comfort, elevated by an array of vibrant toppings. The date-jaggery chutney adds a delicate sweetness, balancing the savoury richness, while the khasta kachori provides the perfect crunch.

Moving to the vegetarian tasting platter, the appetizers served were just wow in taste where every ingredient’s flavour has been differentiated from the other giving a perfect taste. The appetizers in the platter include the Chenna Dahi Kabab blending creamy Greek yogurt and ricotta, pan-grilled to golden perfection, Paneer Tikka with a smoky finish and stuffed mushroom, Bharwan Khumb Tikka showcases teja mirch marinade, cheddar-paneer stuffing. The platter is a must have recommendation.

Beyond the plate, RAAG fascinates with its immersive atmosphere with the striking Sabyasachi-designed wallpaper, the gentle strains of the sitar, and a cocktail menu infused with regional spices elevate the eating experience. Signature drinks, like the Nawabi Sour, complement the carefully curated flavours, ensuring that every sip and bite resonates with authenticity. At RAAG, dining is a celebration of India’s culinary soul with taste that will make you lick your fingers in satisfaction.

Shakes and Smoothies

You can go for an Oreo Caramel Shake and Choco Peanut Butter Shake. Shakes at RAAG break the notion that a milkshake must always be thick, offering a perfect blend of milk and chocolate flavours.

Amritsari servings

From the Amritsari Kulcha Bar you can have a Classic Aloo Pyaaz Kulcha, taste that directly teleports you to the land of Amritsar with layered Indian flat bread with stuffing of your choice, served with dal makhni, hommade compote and white butter.
