Marcel Ravin, a starred and committed Chef
Sustainable development is a must in the resort's kitchens, thanks to Chef Marcel Ravin, a starred chef who defends good food as well as the planet in general.
A strong commitment that stands out from the ground to the plate! Cooking seasonal fruits and vegetables, freshly harvested nearby is more than an involvement, a priority for Marcel Ravin. At Blue Bay, the signature restaurant of Monte-Carlo Bay, the vegetables picked a few steps away are in the heart of the dish, with meat and fish as a supplement. last year, the "Mister Good Fish" charter was signed, allowing to respect the marine resources, thanks to a list which enumerates recommended species by season. The Chef also collaborates with the start-up Terre de Monaco, founded by Jessica Sbaraglia, creator of urban organic vegetable gardens, including the Monte-Carlo Bay vegetable garden.
